Coconut curry with greens & naan

  • 2 cans mackerel in coconut curry
  • Curry powder
  • ½ can coconut milk
  • ½ dl water
  • A little cornstarch
  • Lemon juice
  • Coconut flakes
  • Fresh peas – peeled
  • 1 red onion – half sliced
  • Sliced red chili
  • Cilantro
  • Sliced spring onion
  • 2 naan or other flat bread
  • Salt, black pepper
  • Rice (optional)

This is how you do it

Open the cans and add only the sauce to a pot along with water, coconut milk and curry powder to your liking.
Let the sauce boil up and season with salt, black pepper, and lemon juice.
Thicken and smooth out the sauce with cornstarch.
Warm the naan in a pan, toaster or in the oven.
Add spring onion, peas, and large pieces of mackerel into the sauce and gently stir it all together without breaking the mackerel fillets.

Serve the sauce in a bowl with coconut flakes, cilantro, and spring onion.

Enjoy with warm naan and rice.
